Banana Protein Brownies (sweet)

Vegetable Used: None

Ingredients: 2 ripe banana, 2 scoops of chocolate protein powder, almond/ peanut butter

Steps to Make it:

Preheat the oven at 375 degrees

Mash the bananas with a fork until it’s a paste.

Mix in your choice of chocolate protein powder and almond/ peanut butter

Pour the batter into a baking pan lined with parchment paper

Bake at 375 degrees for 25-30 mins

Beans and rice with peppers (veggie) (savory)

Vegetable Used: peppers

Ingredients: Five cups mayocoba or pinto beans, three cups white rice, water, and some peppers. We have a big family, so we used a lot of beans and rice. If you are not planning to serve more than twelve people, you might want to do half the recipe or less. My pepper was small, and I only put it in my bowl, so I’m not exactly sure how much you would do for this recipe, but I might hazard a guess at three or more full size peppers.

Steps to Make it: Using an Instapot, measure the five cups of beans in, add water to the max fill line, turn the settings to beans/chili, and press start. In a medium sized pot measure three cups of white rice and six cups of water. Bring to a boil, then down to a simmer for twenty minutes. while the beans and rice are cooking, cut up the peppers into small chunks (exact size depends on your personal preference). When the rice and beans are done, scoop rice into the bowl, scoop some beans in as well, and then sprinkle (or dump) some pepper chunks on the top. I have not said exactly how much of each thing to put in each bowl because I think that should be up to the person making the dish. After that, add preferred amount of salt, mix, and enjoy!

Opinion: I liked this recipe. I think that maybe in the future if I were to publicize the recipe or let friends use it, I should figure out how to do it without the Instapot and use a different method that more people have access to. I would also probably add more peppers than I did this time, because I couldn’t taste them very well. I also used the mayocoba beans because I think they have more flavor (and we didn’t have pinto beans in the house at the time).

Bruschetta (veggie) (savory)

Vegetable Used: Tomato

Ingredients: bread, tomato, cheese, dano seasoning, Basil.

Steps to make it: Start by heating up a pan on the stove at about medium high heat. next you cut the tomatoes into tiny squares. then you put some cheese on the pan but make sure it is about the some size as the piece of bread. after that you need to pt some dano seasoning on the cheese, then put the piece o bread on top o the cheese. let it cook for about 45 seconds then flip the piece of bread over with the cheese on it. Let the other side of the bread cook for a few minutes so that it is a little crunchy. when it is done yo can put it on a plate and then put the tomato and basil on top. Then enjoy!

Opinion: it is really good. I would make it without tomato mostly because I don’t like tomatoes.

Chicken Nugget Salad (veggie) (savory)

Ingredients: salad mix, cucumber, bell pepper, avocado, apple, radish (from garden), chicken nuggets, and dressing of your choice

Steps to Make it: Make chicken nuggets, Cut up veggies, toss greens and veggies, put chicken nuggets on top and finish with some dressing

Would I make it again: Yes this is a very common dinner in my household

What would i change: I’d add more veggies to it

Garden Salad (veggie)

Vegetables Used: Zucchini and lettuce

Ingredients: Lettuce, zucchini, tomatoes, ranch, and Parmesan cheese.

Steps to Make it: Cut up the vegetables, then put them in a bowl and toss them. Add the cheese and ranch, then enjoy.

Opinion: It was pretty good, I would add more tomatoes though.

Radish Bread (veggie) (sweet)

Vegetable Used: radishes

Ingredients: 2 cups flower, 1 teaspoon ground cinnamon, 1 teaspoon baking soda, 1/1 teaspoon salt, 1 cup sugar, 1 egg, 1/4 cup milk, 1/2 cup applesauce, 1 1/2 cup shredded radish (from garden)

Steps to Make it: 1) preheat oven to 350 degrees. 2) grease a 9X5 bread pan. 3) sift together flour, salt, baking soda, and cinnamon. 4) whisk together applesauce, milk, egg, and sugar. 5) pour wet ingredients into dry and mix together. 5) Fold in shredded radishes and mix together. 6) Pour patter into pan. 7) Bake for 60 to 70 minutes.

Opinion: Surprisingly the bread tastes pretty good and even more surprisingly the whole family loved it. I would make it again and try it next with the full amount of shredded radishes instead of only half and reduce the amount of sugar.

Radish Dip (veggie) (savory)

Vegetable Used: Radish

Ingredients: 1 pkg (8 oz) cream cheese, 1/4 cup butter, 1/2 tsp celery salt, dash paprika, 1/2 tsp Worcestershire sauce,1 cup of finely chopped radishes, and 1/4 cup of finely chopped onions.

Steps to Make it: Mix cream cheese, softened butter, celery, salt, paprika, and Worcestershire sauce in a bowl until smooth. Next stir in the radishes and onions. Last thing to do is let it chill for several hours so that the flavors can blend together.

Opinion: It was really good.

Radish Salad (veggie)

Vegetable Used: radishes,tomatoes

Ingredients: radishes,onions,tomatoes,and mixed salad

Steps to Make it: 1 you cut the radishes into fourths, 2 cut your onions and tomatoes and add them to the radishes, 3 you combine all of it into the salad and add your dressing.

Opinion: this recipe was really good and I would make it again.

Salsa (veggie) (savory)

Ingredients: Tomato’s and hot peppers from garden, garlic, red onion, garlic powder, salt, pepper, chili powder, parsley and a squeeze of lime.

Steps to make it: Dice tomatoes, peppers, garlic, and onion and throw it in a bowl. Make sure you get as much of the tomato juice in the bowl as possible. Get a fork and lightly mash it all to make it more of a soupy consistency, but keeping the chunks. Afterwords add all the seasonings, your squeeze of lime, and mix well. Let sit for a day or two in the fridge. Serve with chips and enjoy.

Would i make it again: Yes absolutely, this was a very simple but very good salsa.

What would i change: I probably would have put cilantro in there if i had it.

Squash Salad (veggie)

Vegetable Used: Squash

Ingredients: squash, spinach and ranch

Steps to Make it: You get the ingredients, cut the squash and then throw everything in a bowl.

Opinion: I added to much ranch but the squash reminds me of the texture of potatoes.

Yellow Zucchini Soup (veggie) (savory)

Steps to make:cut up the zucchini,tomatoes,and potatoes in to chunks and then add ur seasonings and water and then let it sit.

Zucchini Crumb Cake (veggie) (sweet)

Vegetable Used: Zucchini

Ingredients: Flour, Dark Brown Sugar, Cinnamon, Unsalted Butter, Baking Powder, Baking Soda, Nutmeg, Granulated Sugar, 1 Egg At Room Temp, Vanilla Extract, Shredded Zucchini, Vanilla Icing Made With Powdered Sugar, Milk, Vanilla Extract.

Steps to Make it:

Preheat Oven To 350 And Grease A 8 Inch Baking Dish.

Make The Crumb Topping: Mix Flour, Brown Sugar, And Cinnamon Together In A Bowl.

For The Cake: Wisk Flour, Baking Powder, Baking Soda, Salt, Cinnamon, And Nutmeg In A Bowl. Wisk Melted Butter Cooled Slightly, Brown Sugar, Regular Sugar, Egg, And Vanilla In A Bowl. Add The Shredded Zucchini Then Pour The Wet Into The Dry And Stir Untill Combined. Add To Prepared Dish And Then Add Crumble Topping. Bake For 40 Minutes Or Untill A Toothpick Comes Out Clean. Make Icing And Pour Over The Hot Cake. Wait Untill The Icing Hardens And Serve.

Opinion: The Cake Was Good. It Was A Bit Too Sweet For My Tastes, So I Would Definitely Spread Less Icing. My Family Enjoyed It. The Cake Tasted Almost Like A Pumpkin Bread. The Top Crumble Was Much Sweeter And Could Be Too Much At Times If You Dont Enjoy Very Sweet Things. Besides All The Dishes, It Was Very Easy To Make And A Good Treat.

Zucchini pasta with homemade pesto (veggie) (savory)

Vegetable Used: Zucchini

Ingredients: Zucchini (julienned), seasoning of choice, pesto sauce (basil, nutmeg, garlic, olive oil, etc.)

Steps to Make it: Fry up the Julienned Zucchini, season it, put the sauce in. Add a meat of choice or eat alone
